Pancake Tuesday: How did you eat yours?

I am sure you are all sitting there right now stuffed to your gills with pancakes – okay maybe you are not but I am!

My husband is the pancake maker in our house but last year he was away and so on the way home from work I rushed in to the supermarket to pick up a packet of the ready-made mix – just add milk.  They turned out fine and everyone enjoyed them but they are not quite as good as the real deal made from scratch.

This year I was looking forward to some freshly made pancakes but my husband announced at dinner last night he had to work late – he had a meeting at 5.45pm and would probably not be home until around 8pm.

Given my new status as temporary stay at home mum I thought I should try to make them myself this year. I made sure I had all my ingredients and fully intended to have the batter made in advance of dinner however this did not happen and so I was trying to make batter while making dinner.

To be fair it’s not exactly rocket science.  A pile of flour, a pinch of salt, an egg and mix in milk.  Done!  The batter was a little lumpy but after one or two I got into the swing of it – even flipping a few much to the delight and amusement of my kids.

To top them off we had a selection of:

  • Lemon
  • Sugar
  • Chocolate spread
  • Cream (of the spray variety)
  • Maple syrup

The two little ones just took them with chocolate spread and cream.  My oldest lashed everything on and I took all but the chocolate spread.

My husband had a couple after he arrived home and was very complimentary.  Better watch myself or I will get the job as family pancake maker. Maybe next year I will get some made for me.
